How to Cook Vegetarian / Vegan Moroccan Tagine

There are a lot of different ways to make a Moroccan tagine, actually the word "tagine" doesn't mean a certain meal, it means the ceramic plate that has a cover where the meal is cooked. So a meal that is cooked inside the tagine could include anything, from red meat to chicken to fish.. could also be sweet or salty.. Tagines also come in different shapes and sizes, but the one you saw in the video is the most common in Morocco.

The tagine meal recipe in the video is just an example of a vegetarian / vegan tagine, the ingredients are not limited to the vegetables and spices you saw in the video, actually you could improvise and create your own variety of vegetables and spices to your own taste.
Ingredients used in this Tagine
- Salt
- Olive oil (1/4 cup in total)
Vegetables: (number and measurement depend on your taste and on how many people are you cooking for)
- Onions
- Carrots
- Pepper
- Zucchini
- Potatoes
- (You may add more vegetables)
Spices used
- Paprika (1 tbsp)
- Ground cumin (1 tbsp)
- Ground black pepper (1/2 tbsp)
- Ground ginger (1 tbsp)
- (You may add other spices as well)
How to cook it
- First thing add about 1/4 cup olive oil to the tagine, followed by a layer of Sliced onions and salt to your taste (you may also add couple garlic cloves peeled and chopped, it enhances the taste of the Tagine
- Add a little bit of each spice you will use
- Fry the onions for about 5 to 7 minutes on medium fire
- Add another layer of sliced carrots (after peeling them)
- (Each time you add a new vegetable you may add a little bit of spices and oil but try not to exceed the total measurements mentioned above)
- Wait another 5 mins then add potatoes, pepper, and Zucchini
- Pour 1/2 cup of water
- Cover the Tagine and let it cook on medium to small fire.
The time of cooking depends on many factors, like your preferences, the quantity and variety of vegetable used, the amount of water used, the fire...etc. Generally a Tagine would take from one hour to two hours in total time.. You could always remove the cover and check if the vegetables are cooked to your preference, but try to not check that often because that will reduce the taste of your tagine. Also the less water you add, the better your tagine will taste
